Tapas & Mezze

Tapas would have to be one of my most FAVOURITE types of food. Its all about being together, conversation food. Food for the soul. Its usually quick and easy and you can just sit back and enjoy snacking as the sun rolls into the water while having a nice cold one with friends.

All these I have used both at dinner parties, BBQ’s even modified versions for the restaurant. Always a treat and full of flavour.

Serves 4

 

What you will need:
Some good crusty bread (Pane di casa, pata dura, sourdough)
4 Leekwurst Sausage, Chorizo (any spicey sausage will do fine)
8-10 Kalamata Olives halved (If your not a fan of olives you can simply leave these out)
1 Lombok red chilli
1 Red Onion finely sliced
80gms Persian Fetta
1 Sprig of Thyme or Lemon Thyme
Olive Oil
Sea Salt
Fresh Cracked Pepper
